Sausage and Potato Stew


1/2  Onion, finely chopped

1/2  Red Bell Pepper, finely chopped

1/2  Yellow Bell Pepper, finely chopped

1/2  Green Bell Pepper, finely chopped

1 tbls. minced garlic

5     Med – large potato’s cut into chunks

1      lb smoked sausage, sliced into bite size pieces

1 tbls. olive oil


Sauté onions, peppers & garlic in small iron skillet in olive oil. Set aside.

Brown sausage pieces in large iron pot or deep iron skillet. Once browned, remove sausage & set aside. Add potato chunks to pot sausage was browned in. Cook on med heat, stirring often.  Potato’s will stick to bottom of pot just watch not to burn. It’s okay if they stick, just add a little water to loosen them and stir well. As potato’s cook they will become tender.

As potato’s become tender, start smashing or mashing a few in the pot. Add a little water and stir after each time you mash a few. Smashing or mashing will help thicken the gravy.

When potato’s are almost done, add cooked veggies and cooked sausage. Stir well. Cover loosely & stir occasionally. Simmer 20 minutes.

Serve over cooked rice with garlic bread on the side.
