Hey everyone!! Happy New Year. I hope everyone had a great New Years Eve and New Year’s Day. Unfortunately I couldn’t enjoy the festivities … I ended up with a virus. I stayed up to try to watch the fireworks but just couldn’t make it so I missed out. But that’s okay. I’m feeling better now.
This little video is from a few months back. Usually on the weekend I like to do breakfast a little different that on weekdays. This is one of the most delicious breakfasts I’ve ever had. The first time I had it was at a little breakfast restaurant somewhere on Magazine St. Unfortunately I don’t remember the name of the restaurant but I liked it so much that I just had to make it at home.
It’s pan fried (in butter and a little olive oil) sliced french bread, sliced avocado and a sunny side up egg. While my bread is pan frying, I peel and slice the avocado. Once the bread is ready, I place it on the plate then lay my avocado slices over the slice of bread and sprinkle salt and Cajun seasoning or black pepper on the avocado. While I’m doing that I have my eggs frying on low heat cause I want the yolk to be runny. Once my egg is done I place it on top of the sliced avocado. Add salt and pepper to the egg and enjoy.
