Hearty Beef Stew


2  lbs chuck roast or sirloin roast (cut into 1” cubes)

¼ – ½  c. all purpose flour

¼   c. olive oil or coconut oil

1    tbls minced garlic

1    c. finely chopped onion

½   c. finely chopped green bell pepper

½   c. finely chopped red bell pepper

½   c. finely chopped yellow bell pepper

½   c. finely chopped orange bell pepper

1    can condensed beef broth

1    Basil leaf, chopped

1    Bay leaf, broken in half

4    Med. Size potatoes, peeled and cut into chunks

1    Sm bag frozen cut green beans*

1    Sm bag frozen peas & carrots*

½   can diced tomatoes


Cajun Seasoning ( I use Slap Ya Mama)


*You can use whatever kind of veggies you like*

Season beef cubes liberally with salt and Cajun seasoning. Shake seasoned beef cubes in large plastic bag or container with the flour. Brown flour-coated meat in oil in an iron pot on high heat. Meat will stick to bottom of iron pot as it browns. Be careful not to burn the meat. Once meat sticks, add ½ cup of water. Stir. Repeat browning meat until it’s almost cooded through.

While meat is browning, sauté onions, basil and peppers in 1 tbls oil. Set aside.

Once meat is browned, add 3 cups water, beef broth, diced tomatoes, potatoes, veggies, bay leaf, sautéd onions, basil & peppers. Stir well. Turn heat to med. Heat. Add 1 tsp. salt & 1-2 tsp Cajun seasoning. Taste and add more if needed.

Cook on Med. Heat, stirring occasionally. Sauce will thicken as it cooks. Cook for 2 – 3 hours or until meat cuts easily with spoon.

Serve over cooked rice.
